Fried crispy pigeon: A review

The pigeon was good in terms of taste and quality. It was tender too. However, it wasn’t crispy outside as I expected, and the way most pigeon orders are in major restaurants. Perhaps there’s a frying technique? Would like to know.
Also, most Cantonese recipes require rubbing the pigeon with maltose syrup prior to frying. Will this improve its quality? Thanks.
